I’ll admit it—I’m not much of a believer in luck, but I’ve heard it said that a round chocolate cake, especially around the new year, can bring good fortune. Well, as far as I’m concerned, there’s no better kind of luck than a slice of decadently rich chocolate cake paired with a fantastic year ahead. If those two things happen to align, I’d say I’m pretty okay with that. Now, let’s talk cakes. Not just any chocolate cake, mind you—this one has a little something extra. A hint of coffee, espresso buttercream, and a dark chocolate cinnamon glaze elevate this dessert into something truly special. The buttercream balances out the boldness of the dark chocolate and coffee, while the glaze provides an unexpected burst of flavor that melts in your mouth. For this recipe, I baked three layers of dark, moist chocolate cake, adding a hot cup of coffee straight into the batter for an extra kick. Between the layers, I spread a generous amount of espresso buttercream. Then, I finished it off with a thick drizzle of dark chocolate cinnamon glaze. It’s a symphony of textures and flavors! To start, I melted butter and brewed a cup of coffee using my trusty Keurig 2.0. While they cooled slightly, I sifted together the dry ingredients: flour, baking soda, and salt. In another bowl, I mixed sour cream, eggs, and extracts. Once the butter and coffee were combined, I whisked in cocoa powder and sugar over medium heat until everything was smooth. Then, I added the wet and dry mixtures together, creating a rich batter. The buttercream was simple yet divine. I beat butter until light and fluffy, gradually adding powdered sugar and whipping until it reached a silky texture. Finally, I stirred in a couple of tablespoons of espresso for that extra caffeine boost. For the glaze, I melted chocolate, butter, corn syrup, and cinnamon over a double boiler until smooth and glossy. The result? Layers of chocolate heaven, topped with a decadent finish that left everyone speechless. It’s the perfect dessert for ringing in the new year—or any occasion that calls for a touch of indulgence. And because serving cake alone might feel a bit...lacking, here’s a quick and easy way to pair it with a delicious Dulce de Leche coffee.
