Eats // No Boil Mac + Cheese
A few days ago, I found myself craving something comforting and hearty—perhaps it was the steady drizzle outside, or maybe it was the random assortment of ingredients lurking in my fridge calling out to me. Whatever the reason, mac and cheese popped into my mind, and boy, did it hit the spot. Not only was it exactly what I wanted, but the fact that it required minimal cleanup made it even more appealing.
I quickly sent a text to my friend Carly, who always has my back, asking if I could borrow some pasta since I didn’t feel like taking all three kids to the store just for one ingredient. She happily agreed, and soon enough, I was ready to dive into this cozy meal. The best part? No boiling the noodles required!

**What You’ll Need:**
- 1 (16 oz) package of pasta (I used rice pasta shells, but regular pasta works too)
- 1 cup of milk
- 3 cups of chicken broth
- 2–3 cups of shredded cheese (whatever type you fancy)
- 8 oz of softened cream cheese, cut into cubes
- 2 cups of shredded cooked chicken (optional)
- 1 teaspoon of dry mustard
- Salt and freshly ground black pepper to taste

**How to Make It:**
Preheat your oven to 375°F. In a large mixing bowl, combine all the ingredients thoroughly. Transfer the mixture to a generously greased, deep casserole dish. Use your hands or a spoon to press the pasta down until it’s completely submerged in the liquid.
Pop it in the oven, uncovered, for 30–40 minutes, or until the pasta is tender. Once done, sprinkle a bit of fresh Parmesan on top for an extra touch of flavor, and voila! Dinner is served.
This dish was such a lifesaver. It felt like a hug in a bowl, and it reminded me why mac and cheese will always be one of my go-to comfort foods.
