Mushroom preserves production method

1. Selection and Processing. Choose fresh straw mushrooms that are full-bodied, without caps, and free from mechanical damage. Immediately after harvesting, immerse them in a 0.03% sodium metabisulfite solution for 6 to 8 hours. Afterward, rinse the mushrooms thoroughly with clean water to remove any residual chemical. 2. Blanching and Hardening. Place the treated mushrooms into boiling water and blanch for 2 to 3 minutes to inactivate enzymes and prevent discoloration. Remove the mushrooms immediately, then place them in cold water to cool down. Once cooled, soak them in a 0.5% to 1% calcium chloride solution for 10 to 12 hours to enhance firmness. Rinse the mushrooms 3 to 4 times with fresh water to remove any remaining solution. Next, briefly immerse them in 85°C hot water for 5 minutes, followed by another rinse in clean water 3 to 4 times to ensure cleanliness and proper texture. 3. Cold Sugar Soaking. After rinsing, the mushrooms are soaked in a 40% sugar solution for 12 hours. This step helps to gradually infuse sweetness and improve the overall texture of the product. 4. Concentration. Once the mushrooms have cooled, add more sugar to increase the concentration to 60%. Transfer the mushrooms and the sugar syrup into a stainless steel pot and bring it to a boil over high heat. Then reduce the heat and continue simmering until the syrup reaches a temperature of 108–110°C. Check the concentration using a sugar meter, aiming for about 75% concentration before stopping the process. 5. Drying and Sugar Coating. Dry the mushrooms in a controlled environment where the temperature does not exceed 60°C. Bake for approximately 4 hours, turning the mushrooms regularly until they are no longer sticky when touched. While still warm, sprinkle 10% powdered sugar (prepared by drying and grinding sugar at 60–70°C) over the mushrooms. Mix evenly, then sieve out any excess sugar. Finally, package the product according to specified standards for distribution and storage. This method ensures a balanced sweetness, extended shelf life, and a visually appealing finished product.
