Canned food processing

Process: Raw material selection → cleaning, peeling → blanching → canning → exhaust, sealing → sterilization, cooling.

Operation points:

(1) Selection, cleaning and peeling of raw materials. Choose bulbs with no pests, no damage, and a diameter of 2 cm or more. Rinse them with water and then peel them with a knife. Soak them in clean water.

(2) Blanching. Place the bulbs in boiling water for 1 to 2 minutes, and heat evenly. Remove them and immediately cool them with running water.

(3) canning. The treated bulbs were placed in a sterilized tin or glass bottle and filled with 65% to 70% of the net weight. Distilled water at 60 to 70°C was then injected until the can was full.

(4) Exhaust and seal. Place the jar in a 90°C water bath so that the jar center temperature reaches 70°C, then hold for 10 minutes, remove and seal immediately.

(5) Sterilization and cooling. The sealed cans are sterilized in boiling water for 10 to 15 minutes, cooled to 38 to 40°C after being removed, and can be packaged for sale after inspection.
