White sugar ginger, also known as sweet and spicy ginger, offers a delightful balance of sweetness and heat. It is commonly used as an appetizer, helps strengthen the spleen, and has detoxifying and cooling properties. The production process is detailed below:
First, select high-quality ginger with a firm texture, no scars, and a fresh, spicy flavor. The ginger should not be too fibrous or tough.
Next, wash and peel the ginger. After rinsing thoroughly with water and drying it, remove any buds or unwanted parts. The skin can be peeled by hand or using a machine.
Then, slice the ginger. Rinse the peeled ginger with clean water, then cut it into 0.5 cm thick slices, ensuring all debris is removed.
After that, blanch the slices. Place the ginger in boiling water until it becomes translucent—this usually takes about 3 to 5 minutes. Remove and cool it in cold water, then soak it in clean water for 6 hours to soften further.
Next, prepare the syrup. For every 1000 grams of ginger, add 35 kilograms of sugar. Place the ginger in a container and let it sit with the sugar for 48 hours to allow the sugar to penetrate.
Then, cook the ginger in the sugar syrup. Transfer the ginger and syrup into a pot, and bring it to a boil. As it reduces, the syrup will become thick and sticky, forming threads. Add sugar in three stages, each time adding 10 kg, to ensure even sugar absorption. At this point, the sugar concentration should exceed 80%.
Afterward, mix the ginger with additional sugar. Once the syrup is drained, place the ginger in a wooden tank and mix it with approximately 10 kg of sugar.
Finally, finish the product. Sift off any excess sugar, and coat the ginger slices with a thin layer of white sugar for a polished appearance.
The final product has a sweet and slightly spicy taste, with a smooth, sugary texture in the mouth. It contains 60-68% sugar and 16-18% moisture, making it both delicious and long-lasting.
